Hands On & Dine: Cooking the Harvest
Let’s put the cornucopia of freshly harvested fruits and vegetables to good use with these sweet and savory seasonal recipes. Recipes include: pork chops with caramelized apples and shallots, cider-braised red cabbage, butternut squash gratin, and pear and cranberry streusel. (Registration: $55 per student (wine served))

Hands On & Dine: Quintessence Revisited: Mexican Night
Mexican dishes made at home are easy when recreating the Quintessence Mexican Night menu. Recipes include: black bean soup, fried tortilla chips with salsa fresca and guacamole, chicken fajitas, and banana chocolate chip chimichanga. (Registration: $55 per student (wine or beer served))

Hands on & Dine: Baking Basics
Learn three basic baking techniques to make simple, impressive homemade desserts. Recipes include: chocolate shortcake with mixed berries, pâte à choux, and salted caramel apple pie. (Registration: $55 per student (wine served))

Hands On & Dine: Fall Pasta
What’s more perfect on the first day of fall than a hearty plate of pasta, with fall produce supplying some of the best inspiration for seasonal pasta dishes? Recipes include: butternut squash ravioli with brown butter sage sauce, fettuccine bolognaise, and apple cider donuts. (Registration: $55 per student (wine served))

Tuesday, September 27; 6 to 9 pm
Hands On & Dine: Less Than 30 Minute Meals
There are some nights when you just need to get in and out of the kitchen in a hurry. These delicious dishes are ready in less than 30 minutes. Recipes include: miniature shepherd’s pie, garden vegetable frittata, and chicken and spinach stuffed shells. (Registration: $55 per student (wine served))

Hands On & Dine: Knife Skills
Learning how to cut properly can make the difference between kitchen duty being seen as a chore instead of a joy. Recipes include: sweet potato corn chowder, grilled chicken tostada with salsa, guacamole, and chipotle crema, and puff pastry fruit tarts. (Registration: $55 per student (wine served))

Recipes consist of ethnic dishes, homemade classics and more. The registration fee for each class ranges from $25 to $55 per student.

Tuesday, September 1; 6 to 9 pm
Hands On: Feel the Burn
Heat up the night with these spicy dishes. Recipes include: spicy black bean soup with chipotle crema, chorizo beef sliders (en fuego!), pickled peppers and onions (escabeche), and chicken tenderloins with roasted poblano-avocado dressing. (Registration: $55 per student (wine and beer served))

Lunch and Learn: Thai This at Home
Enjoy lunch while watching a demonstration of Thai cooking, with its emphasis on lightly prepared dishes with strong aromatic components and a spicy edge. Recipes include: green coconut curry mussels and chicken tikka masala. (Registration: $25 per student)

Hands On: Couples Night Out/Oh, the Pasta-bilities!

The most basic cooking begins with good knife handling. Participants will learn basic cuts, knife safety, as well as how to sharpen knives at home. Hands On: One Potato, Two Potato, Three Potato….
Three great takes on using potatoes as a main ingredient for a tasty meal. Recipes include potato pancakes, gnocchi a la pomodoro, and sweet potato enchiladas. (Registration: $55 per student (wine served))

Thursday, February 5; 6 to 8 pm
Food and Wine Pairing with Heron Hill Winery
Eric Frarey of Heron Hill Winery will serve wines with small tastes prepared by Cooking School Chef Instructor John Winnek. Pairings include fruit and cheese with Eclipse White, scallop fennel orange salad with Dry Riesling, three cheese ravioli with Chardonnay, grilled chipotle beef with Cabernet Franc, and dessert. Demonstration: Come Sauté with Me

Hands On: Romantic Roman Holiday
