Quinoa Salad with Grilled Veggies

Quinoa is a superfood that’s rich in protein and fiber. This salad combines quinoa with grilled vegetables for a delicious and nutritious dinner.


  • 1 cup quinoa
  • 2 cups water
  • 1/2 cup cherry tomatoes
  • 1 bell pepper
  • 1 zucchini
  • 1 red onion
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup feta cheese
  • 2 tablespoons balsamic vinegar


  1. Rinse the quinoa under cold water until the water runs clear. This removes the quinoa’s natural coating, which can make it taste bitter.
  2. In a saucepan, bring the water to a boil. Add the quinoa, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the quinoa has absorbed all the water. Remove from heat and let it cool.
  3. While the quinoa is cooking, preheat your grill to medium heat. Slice the bell pepper, zucchini, and red onion into large pieces that won’t fall through the grill grates.
  4. Toss the vegetables in olive oil, salt, and pepper. Grill them until they’re tender and have nice grill marks, about 10 minutes.
  5. Once the vegetables are done, let them cool, then chop them into bite-sized pieces. Halve the cherry tomatoes.
  6. In a large bowl, combine the cooled quinoa, grilled vegetables, cherry tomatoes, and feta cheese. Drizzle with balsamic vinegar, then toss everything together.
  7. Taste and adjust the seasoning if necessary. You can serve the salad warm, or refrigerate it and serve it cold.
