Chickpea Salad Bread Roll

This chickpea salad bread roll is a nutritious and filling vegan lunch choice. It’s full of protein and fiber, and it’s simple to prepare.

What You Need:

  • 1 can of chickpeas
  • 1/4 cup of plant-based mayonnaise
  • 1 tablespoon of Dijon mustard
  • 1/4 cup of diced celery
  • 1/4 cup of diced red onion
  • 1/4 cup of diced pickles
  • Salt and pepper as per your taste
  • 4 pieces of bread
  • Lettuce and tomato for serving

How to Make It:

  1. Empty and wash the chickpeas. Crush them in a bowl with a fork until they’re mostly crushed with some whole chickpeas left.
  2. Put the plant-based mayonnaise, Dijon mustard, diced celery, diced red onion, and diced pickles into the bowl. Mix everything together until it’s well combined. Add salt and pepper as per your taste.
  3. Spread the chickpea salad onto a piece of bread. Add lettuce and tomato on top, then put another piece of bread on top to make a bread roll.
  4. Do the same with the remaining ingredients to make a second bread roll.
