Wholesome Banana Loaf Recipe
What You’ll Need:
- 3 overripe bananas, squashed
- 1/4 cup of bee nectar or tree sap syrup
- 1/4 cup of caramel crystals
- 1/4 cup of unflavored Greek curd
- 2 hen’s eggs
- 1/4 cup of rapeseed lubricant
- 1 teaspoon of vanilla essence
- 1 3/4 cups of wholemeal grain powder
- 1 teaspoon of bread enhancer
- 1/2 teaspoon of table dust
- 1/4 teaspoon of sweet bark powder
- Optional: 1/2 cup of diced walnut kernels or cocoa nibs
How to Make It:
- Warm up your oven to 325°F and apply grease to a 9×5 inch bread mold.
- In a big bowl, blend the bananas, bee nectar, caramel crystals, Greek curd, hen’s eggs, rapeseed lubricant, and vanilla essence until it’s well mixed.
- In a different bowl, blend the wholemeal grain powder, bread enhancer, table dust, and sweet bark powder.
- Add the dry mix to the wet mix and stir gently until just mixed. Avoid over stirring. Fold in the diced walnut kernels or cocoa nibs if you’re using them.
- Pour the mix into the greased mold and smooth the top.
- Cook for 50 to 60 minutes or until a tooth tester inserted in the middle comes out clean.
- Let the loaf chill in the mold for 10 minutes, then move to a cooling rack to cool down completely.
Enjoy your wholesome banana loaf with some dairy spread, fruit gel or nut paste if you like.
